Fernie Alpine Springs is owned and operated by Ami Lee and Simon-Mark LeFrancois. Ami was born and raised in Korea and has extensive knowledge of fermented and probiotic-rich foods. Simon is a scientist by trade and started brewing 25 years ago. Together, they not only share a passion for flavours, but their travels have taken them to live in places as far as the Dominican Republic, Madagascar and Tunisia and marked by discovering new ways of producing food and drink, including kombucha.
