Owner-operators Peter Jorgensen and Katey Wright have been happily meeting customers’ chocolate needs, wants, and petty whims at our storefront in New Westminster’s River Market since 2018. We curate an excellent selection of bean-to-bar craft chocolate. Our criteria:
Must be bean-to-bar: chocolate makers begin with whole ingredients – cocoa beans – rather than blocks of partially processed cocoa mass.
Must be direct-trade: chocolate makers buy cocoa beans directly from farmers or farm collectives, paying many times the commodity price for their crop.
Must be traceable and transparent.
Must taste fantastic: Like wine grapes, the flavour of cocoa beans varies widely depending on the variety of tree and where in the world it was grown. Craft chocolate makers expertly use variables like roasting time and temperature, conching time, and quantity of sweetener to coax a symphony of flavour notes from their beans. You’d be amazed by what just two ingredients – cocoa beans and sugar – can become in the hands of dedicated artisans. And when they begin to imagine various flavour combinations … well, the sky’s the limit.
We launched a full online sales platform just before the first COVID lockdown in 2020, including shipping, home delivery, subscription packages, and virtual tastings, all of which have become big parts of our business. Chocolate for everyone!
